Three Barrel Project'n valmistama Uudessa-Seelannissa, Martinborough’n alueella. Aatami on tehty käsin poimituista ja jaloin murskatuista Pinot Noir rypäleistä, legendaarisesta 2013 sadosta. Viinistä 66 % käytettiin rankojensa kanssa ja se kypsytettiin vanhoissa ranskalaisissa tammitynnyreissä minimaalisella käsittelyllä. Aatami on kaikkea mitä kiwi Pinot Noirilta voi toivoa. Nimetty rakkaan kummipojan, Aatamin, mukaan. Valmistettu vain 900 pulloa. 


The grapes were hand-harvested and tipped 100% whole bunch into a small open top tank. The tank was treaded by feet straight after that and was left to macerate for a few days before the fermentation kicked in. During fermentation the cap was treated with a punch down daily. After fermentation finished (17 days on skins), the wine was pressed into two old French oak barrels for maturation and underwent complete malolactic fermentation in the following spring. The wine was then racked off lees and blended with one barrel of 100% de-stemmed Abel clone leaving the final blend with 66% stem contact. Minimal handling, no fining and coarse pad filtering for clarity only just before bottling.

The nose is perfumed, spicy and peppery with dried herbs, plums, cherries, raspberries and a hint of lingonberry and marzipan. On the palate Aatami is structured and elegant with refined tannins, and a hint of stems and toast. Lovely aromatics, flavours of plums, red currants and black pepper. Youthful wine with huge potential for aging.
